Not only is this the easiest cake I’ve ever made, it’s also unbelievably delicious!
I swear the recipe is some type of magic sorcery...
The ingredients: oats, almond flour, baking powder, baking soda, salt, bananas, frozen strawberries.
Yes. That’s IT. HOW EPIC?!
And the frosting is a delicious cacao yogurt concoction.

Made a batch of these to snack on during full-day virtual orientation for my MBA program this week. Staying optimistic that’ll it’ll still be an exciting start to this new chapter! (Even if it’ll be on my couch...) But alas, grateful for a new beginning!

PEANUT BUTTER BANANA BLUEBERRY MUFFINS:

- 2 bananas
- 1/2 cup @georgiagrinders peanut butter
- 1/2 cup almond milk
- 1/3 cup maple syrup
- 1 egg
- 1 cup @krusteaz gf flour
- 1 cup almond flour
- 1 tsp baking powder
- 1 tsp cinnamon
- lots of blueberries
Mash the bananas. Add the wet ingredients. Then dry. Fold in blueberries. I baked my mini muffins at 350° for about 18 minutes!

Simple summer salad vibes on this sunny Saturday 🙌🏼
I went for a sweaty run with some of my classmates this morning, so I’m craving all of the crisp, fresh foods in this heat!
Well this super simple recipe lives up to the challenge - check it out:
For the dressing.... combine 3 tbsp olive oil, 3 tbsp lemon juice, 1 tbsp dijon, 1 tsp oregano, 1/2 tsp black pepper, and 1/2 tsp salt. Chop some persian cucumbers, cherry tomatoes, red onion, and parsley. Toss in the dressing. Then add feta on top! ENJOY!

These v/gf blender banana pancakes are inspired by @_afreshpurefood and couldn’t be any easier!
I’ve made two batches already this week 🙌🏼
And I think the next batch needs to happen today..... with chocolate chips!

Blender BANANA PANCAKES
- 1 cup oats
- 1/2 banana
- 2/3 cup @oatly oatmilk
- 1 tsp vanilla
- 2 tsp cinnamon
- 1 flax egg
- 1 tsp baking powder
- 1/4 tsp salt
- 2 additional tbsp ground flax (or chia)
Watch the video for details! But basically just blend everything, let the batter sit for 5 minutes while the skillet heats up, and then cook on medium heat for 3 mins per side. ENJOY!

- 1 cup peanut butter
- 6 tbsp maple syrup
- 4 cups cornflakes
- 2/3 cup pb cacao @nutsolaofficial
- @lilys_sweets dark chocolate chips
Stir the pb and maple together. Add the cornflakes and @nutsolaofficial . Press into a square pan. Smear melted chocolate on top. Set in the fridge for an hour. ENJOY!

- 1 can of pinto beans
- 1 can of corn
- 1/2 red onion *diced finely
- 1/2 cup diced roasted red bell pepper
- 1/2 cup feta
- 1/2 cup cilantro
- 1/3 cup greek yogurt
- 2 tsp cumin
- 1 tsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp pepper
- juice of a lime

- 1 banana
- 1/4 cup @georgiagrinders peanut butter
- 3 tbsp ground flax
- 2 tbsp shredded coconut
- 1/4 cup quick oats
- chunks of @alterecosf
Mix together. Scoop into golf-ball-sized mounds and place on a lined baking sheet. Press a chunk of chocolate into the top of each. Bake at 350° for about 10 minutes. Enjoy!

I sip lemon water every morning, so y’all know I have lemon peels coming out of my ears.... Time to put them to use!

Put your citrus peels in a clean glass jar. Cover with white vinegar. Let sit for 1-2 weeks. Drain the peels. Add equal parts water and vinegar solution to a spray bottle. Ta da! Easy peasy lemon squeezey!

Made this for my fam when I was home and it was a huge hit!
Time to make a batch to share with...um...myself?? I think so.

I used @fromthegroundupsnacks cheddar crackers, parm crackers, and butternut pretzels!

CHEX MIX:
- 3 cups @chexcereal rice chex
- 1 1/2 cups cheddar crackers
- 1 1/2 cups parm crackers
- 2 cups pretzels
- 1 cup raw almonds
- 1 stick of butter
- 1 tbsp coconut aminos or worcestershire
- 1 packet ranch seasoning
Mix the snacks in a big bowl. Melt butter and add aminos and ranch. Pour over the snacks and mix. Spread onto a backing sheet and bake at 300° for 15 minutes. Stir. Bake for another 15. Stir. Bake for 15. Stir. Bake one last time! Enjoy!

Digging straight into this classic summertime app before even attempting to clean up... it’s alright, my @wrenhome board makes it beautiful!
Why I love my @wrenhome board? Not only is it stunning, big enough to actually prep food on, has my initial, and durable, it’s also made from sustainably harvested wood! The company is committed to fight against deforestation. Gotta love that!

Now for the best summer appetizer ever...
BLACK BEAN MANGO SALSA
- 2 cans of black beans
- 1 can of corn
- 1 large red bell pepper
- 1 mango
- 1/2 red onion
- 5 green onions
- 2 1/2 cups of @sprouts medium salsa
- 1 lime
- 3 garlic cloves
- 1 1/2 tbsp cumin
- 1/2 bunch of cilantro
Drain and rinse the beans and corn. Dice the pepper, mango and onions and mix with the canned veggies. In a small vessel, purée the salsa with the garlic, lime, cumin, and some of the cilantro. Pour over the veggies and mix. Chop the cilantro and mix into the dip. Best if chilled for a couple hours before serving!

Sunday Snackin 🙌🏼 with some CURRY ROASTED CARROT HUMMUS.
With a guest appearance by the bandaid covering my adventure injury... lol. Thank goodness I always pack my @patchstrips eco bandages!

I can get enough of this, chips and salsa, or watermelon 🍉 Must be summertime!

Drizzle olive oil over 1 lb of whole carrots. Toss with a bit of curry powder and roast at 375° for 30 - 40 minutes. Rinse and drain a can of great northern beans (or chickpeas) and throw them in the blender with the carrots. Add 1/2 cup of @onceagainnutbutter tahini, 3 tbsp water, 1 1/2 tbsp curry powder, 1 tsp garlic powder, 1 tsp salt, 1 tsp pepper. Blend. Enjoy!
