So as a creative outlet between meetings yesterday....
this gluten-free MOLASSES SPICE CAKE with GRAHAM CRACKER CARAMEL was created.
And it was a blast!
Now who’s gonna come help me eat it??
This cake is DELISH - but I the layers are a turn off, bake it in a 9x13 pan! Still fabulous ✨

Molasses Spice Cake:
- 1 1/4 cup brown sugar
- 1/2 cup maple syrup
- 3 tbsp molasses
- 1/2 cup @fage greek yogurt
- 5 tbsp melted butter
- 2 tsp vanilla
- 4 eggs
- 4 tsp cinnamon
- 2 tsp ginger
- 1 tsp nutmeg
- 1/2 tsp cloves
- 1/2 tsp allspice
- 1/4 tsp salt
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 2 1/4 cups @pamelasproducts gf flour
Beat wet. Fold in dry. Bake in floured/lined 6in tins at 325° for 27-30 mins.

CARAMEL:
- 1/4 cup maple syrup
- 1/4 cup sunbutter
- 2 tbsp butter
- 1/4 cup @lilys_sweets white chocolate chips
- 1 tsp vanilla 
Melt everything together in the microwave.

SWEET POTATO FILLING:
- 2 roasted sweet potatoes
- 8oz cream cheese
- 1 1/4 cup powdered sugar
- 2 tsp vanilla
- 2 tsp cinnamon 
- 1/2 tbsp molasses 
Puree everything til smooth.

CREAM CHEESE FROSTING:
- 1 stick @vitalfarms butter
- 6oz cream cheese
- 2 tsp vanilla
- 3 cups powdered sugar
Beat the butter and cream cheese. Add the vanilla and powdered sugar.
It probably won’t be even close to a ~White Chri It probably won’t be even close to a ~White Christmas~ here in Texas, so how about some PB Snowball Truffles instead?? ❄️ 
Yes please! 
Especially when this recipe is suuuuuper simple. Love it. 
Haven’t tried with other nut / seed butters or chocolate, but I’m sure they’d turn out fab too!

PEANUT BUTTER SNOWBALLS:
- 1 cup creamy peanut butter 
- 1 cup @lilys_sweets white chocolate chips 
- 3/4 cup shredded coconut 
Melt together the peanut butter and white chocolate. Mix until silky smooth. Chill in the fridge for a couple hours. Use a lil baby cookie scoop to make the balls. Roll the balls in coconut. Store in the fridge / freezer!

Orange Spice Cookie Bars:
- 1 stick softened butter
- 1 cup brown sugar
- 3 tbsp molasses 
- 1 egg
- 2 tsp vanilla
- zest of one orange
- 1 tbsp cinnamon
- 1 1/2 tsp ginger
- 1 1/2 tsp pumpkin pie spice 
- 1/4 tsp nutmeg
- 1/4 tsp cloves
- 2 1/4 cup @pamelasproducts gf flour
- 1/4 tsp salt
- 1/2 cup white chocolate chips
Beat together the sugar and butter til smooth. Add the wet ingredients and zest. Mix in the spices and flour. Then fold in the chocolate. Spread into a 9x9 pan and bake at 350° for about 30 minutes. Enjoy!

RED PEPPER PASTA
- 2 tbsp olive oil
- 3 cloves garlic
- 1/2 onion
- 2 tsp smoked paprika
- 1/2 tsp turmeric
- 1/2 tsp salt
- 1 tsp pepper
- 2 zucchini
- 1 pint cherry tomatoes
- 8 oz mushrooms
- 1 14oz jar roasted red peppers
- 3/4 cup oatmilk
- 1 3/4 cup veggie broth
- 1 box @AncientHarvest Protein Penne
- 3 cups chopped kale
- parsley + lemon to top
Heat the oil on medium-high. Toasted garlic, onion, and spices for 3 minutes. Add the veggies. Puree the peppers and milk until smooth, then add to the pot. Pour in the veggie broth and add the #highproteinpasta . Stir in the kale. Cover and cook on low for 25 minutes.

Thought I’d kick it off with this #vegan RED WINE CHOCOLATE CAKE from last year. 
Oooof. So good. 
And you’ll never guess the secret ingredient in the fudgey frosting....

RED WINE CHOCOLATE CAKE:
- 3/4 cup almond milk
- 3/4 cup red wine
- 3/4 cup maple syrup
- 1/2 cup melted coconut oil
- 1/2 cup applesauce or pumpkin puree
- 1/2 tbsp vanilla extract 
- 1 1/2 cup whole wheat flour
- 3/4 cup cacao powder
- 1/2 cup brown sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
Beat the wet ingredients together. Sift in the dry. Fold until just combined. Bake in 3 six-inch or 2 eight-inch pans (greased and lined) at 350° for 30-30 minutes. Let cool on a rack before assembling.
CHOCOLATE FROSTING:
- 1 large slow-roasted sweet potato
- 1 cup chocolate chips
- 1/4 cup maple syrup
- 1 tsp vanilla
Peel the roasted sweet potato. Add to a food processor or blender with the melted chocolate chips, maple syrup, and vanilla. Blend until silky smooth.

v/gf Sweet Potato Gnocchi:
- 1 roasted sweet potato
- 3 tbsp almond milk
- 1 1/4 cup @pamelasproducts flour
- 1/2 tsp smoked paprika
- 1/4 tsp salt, pepper, garlic powder
Mix everything together to form a rough dough. Sprinkle flour on the counter. Knead dough into a ball (not too much though! it’ll get sticky). Roll sections of the rough into logs and cut into lil squares. Roll down the back of a fork to create ridges. Boil in salted water for 3-5 minutes. Done!
Gotta be honest... I will always choose apple pie Gotta be honest... I will always choose apple pie over pumpkin... BUT add peanut butter?? Miiiiiiight be a close second. 😉
Regardless, this is the pie recipe you didn’t know you needed. you do. v/gf PEANUT BUTTER PUMPKIN PIE with a pecan crust. YAS PLEASE.

Filling:
- 1 can pumpkin puree
- 1/2 cup @wild_friends creamy peanut butter
- 1/2 cup almond milk
- 1/2 cup maple syrup
- 1/3 cup arrowroot starch
- 1 tbsp cinnamon
- 2 tsp pumpkin pie spice
Mix ingredients together and pour into crust. Bake at 350° for 45 minutes. Cool on the counter for 30 minutes, then chill in the fridge for a couple hours!
(I used the pie crust recipe from my key lime pie post!)

And they’re vegan?? Made with @credofoods cranberry cream cheese and sauce??

These are perfect for the holidays - and the recipe works great as “overnight rolls” for the perfect easy morning bake!

CRANBERRY ORANGE CINNAMON ROLLS
Dough:
- 1/2 cup almond milk
- 1/2 cup orange juice
- 1 tbsp sugar
- 2 1/4 tsp active dry yeast
- 3 1/4 cups flour
- 1 tsp salt
- 2 1/2 tbsp vegan butter
- 2 1/2 tbsp cream cheese (I used @credofoods cranberry)
Heat the milk and oj until just warm (not hot). Stir in the sugar. Sprinkle the yeast on top. Set asides to bloom for 10 minutes. Add flour and salt to the bowl of the stand mixer. Pour in the yeast mixture. Mix on low speed for 3 minutes. Add the soft butter and cream cheese. Knead for 6 minutes in the mixer (10 by hand). Form dough into a ball, coat with oil, and put back into the bowl. Cover and let rise for an hour. 
Filling:
- 1/4 cup soft vegan butter
- 1/2 cup @credofoods cranberry sauce
- 2 tbsp cinnamon
- 1/2 tbsp nutmeg 
Flour the counter and roll the dough into a long rectangle. Spread butter, then sauce on the dough. Sprinkle on the spices. Roll up length-wise and crimp the long edge to the log to keep the filling inside. Cut into 10-12 rolls and place in a buttered baking dish. Sprinkle on extra fresh cranberries. 
Cool now: Cover and rise for 1 hour. 
Cool the next morning: Cover and put in the fudge overnight. Remove 1 hour and 20 minutes before you want to bake. 
Bake at 350° for 35-40 minutes. 
Icing:
- 1 cup powdered sugar 
- 2 tbsp orange juice 
- 1/2 tsp vanilla

Maple Garlic Green Beans:
Wash + trim 1lb of fresh green beans. Mix together 2 tbsp maple syrup + 1/2 tbsp olive oil + 4 diced garlic cloves + salt + pepper. Pour over the beans and toss to coat. Spread onto a baking sheet. Roast at 400° for 15 minutes.

Don’t worry friends, I was measuring the flow rate and inventory levels very carefully. There is no bottleneck in rice krispie treat processing.

PSL Treats:
- 1 tbsp pumpkin puree
- 1 tbsp @jot ultra coffee
- 1 tbsp @dvashorganics syrup
- 2 tbsp butter
- 4 cups marshmallows (35 large mallows)
- 1 tbsp pumpkin pie spice 
- 5 1/4 cups rice krispies 
Melt everything but the cereal in the microwave in 30 second increments. Stir in the cereal. Smush into a pan. Chill in the fridge for a couple hours!

APPLE CINNAMON CUPCAKES:
- 3 tbsp melted butter
- 1/2 cup brown sugar
- 1/3 cup plain greek yogurt
- 2 eggs
- 1 tsp vanilla extract
- 2 tbsp cinnamon
- 1/4 tsp salt
- 2 2/3 cups @pamelasproducts Baking & Pancake Mix
- 1 medium apple *shredded
Preheat the oven to 350 degrees. Mix the butter, brown sugar, and yogurt. Then the eggs and vanilla. Add the dry ingredients. Fold in the shredded apple. Scoop into greased mini muffin tins and bake for 13ish minutes. Let cool. Poke a hole in the middle and add some caramel. Top with cinnamon whipped cream and extra caramel!

This bread is naturally sweetened with @dvashorganics date syrup and @rigoniasiagousa fig jam - which dials down the sugar overload and allows the flavors of the spices to shine through! 
12/10 recommend a slice pan fried with a touch of maple syrup. 🍁

Pumpkin Fig Bread
- 1/2 cup @traderjoeslist raw almond butter
- 1/2 cup fig jam
- 1/2 cup @dvashorganics date syrup
- 1/2 cup pumpkin puree 
- 2 chia eggs (2 tbsp ground chia + 5 tbsp hot water)
- 3/4 cup @ripplefoods milk
- 1 tsp vanilla
- 1 tbsp apple cider vinegar
- 1 2/3 cup @pamelasproducts gf flour
- 1 1/2 tsp baking soda
- 1 1/2 tbsp cinnamon 
- 1 1/2 tbsp pumpkin pie spice
Mix the wet until well combined. Fold in the flour, soda, and spices. Scoop into a lined loaf pan. Swirl extra @dvashorganics syrup into the top. Bake at 350° for about 50 minutes. Enjoy!

Chewy Chocolate Chip Cookies
- 2 sticks softened salted butter
- 3/4 cup brown sugar
- 1/3 cup white sugar
- 2 tbsp @dvashorganics date syrup
- 2 eggs
- 1 tsp vanilla
- 2 1/4 cup flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1/3 cup semi sweet chips
- 1/3 cup dark chocolate chips
- 1/3 cup dark chocolate chunks
Cream together the butter, sugar, and date syrup. Add the egg and vanilla. Then the flour and baking powder. Fold in the chocolate. Scoop rounds onto a lined baking sheet. Bake at 350° for 15ish minutes (they’ll be darker than a normal cookie b/c of the date syrup). Remove from the oven and bang the tray on the counter a couple times to get that ripple edge thing goin on. Cool and devour!
