Tahini Oatmeal Raisin Cookies (v/gf)

Ooof. Can’t think of a more polarizing cookie.

Love ’em? Or victim intense disappointment when you were expecting chocolate chips….

Some people are raisin haters.

And that’s okay. I can live with that.

It just means there will be more of these left for me!

Raisins and I are going through a phase.

We have a trail mix station at work – I am single-handedly causing an increase in order cadence of raisins.

And as great as they are to snack on plain…everything is better in a cookie.

Not gonna lie, I had low expectations for these.

A vegan and gluten free cookie? That stays together? Stays thick and chewy? And doesn’t taste like sand?

The ultimate cookie challenge.

Challenge. Accepted.

Challenge CONQUERED.

Seriously guys, it was love at first bite.

I literally said, “Oh my gosh. I can’t believe they’re actually this good.”

(great self confidence… hah!)

I’m going to go on a limb and say this is the best cookie recipe I’ve concocted. Ever.

And they’re vegan, gluten-free, and nut-free?

I’m basically a magician. Jk.

Want your own stack?

Lets get cooking.

The coconut oil should be a soft-solid when you measure. Add this to your bowl with the sugar. Beat until well combined.

Then scoop in the tahini.

Blend for a couple minutes until it is light and creamy.

Then the milk and flax egg get dumped in.

What’s a flax egg? Combine 1 tablespoon of ground flaxseed with 2 1/2 tbsp of hot water. Stir together and let sit for 5 minutes. It will turn gelatinous and gloopy.

After the wet ingredients are thoroughly combined, throw in the oats, flour, baking powder, and baking soda.

*sub flours at your own risk – adjust quantity if batter seems too wet

I used a power oats mix that included chia and quinoa, but normal oats are fine!

Last, but not least, the raisins.

You could make these with chocolate chips, but sometimes it’s gotta be the raisins’ time to shine!

Make sure you use a piece of parchment or a oven-safe liner on your pan.

Also a large ice cream scoop with a trigger makes scooping cookies a breeeeze. (Best cookie investment honestly…)

Pop them in the oven for 10-12 minutes.

And enjoy the lovely aroma that will fill your kitchen.

Okay, ready for the crucial part?! PATIENCE. You HAVE to let them cool on a wire rack. If not, they will collapse and crumble and turn into cookie granola. That’s not the objective here.

So. Let. Them. Cool.

Got it?

Great.

After they cool, stack ’em, grab ’em, and demolish ’em.

Tahini Oatmeal Raisin Cookies (v/gf)

Soft, chewy, rich and delish! You wouldn’t even guess they’re gluten-free and vegan!
Servings: 10 large cookies

Ingredients

  • 1/3 cup coconut oil *soft solid
  • 2/3 cup coconut sugar
  • 3 tbsp tahini *Seedible brand
  • 1 flax egg *1 tbsp flax + 2 1/2 tsp hot water
  • 1/4 cup almond milk
  • 1 cup oats
  • 3/4 cup gf all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/3 – 1/2 cup raisins

Instructions

  • Preheat oven to 350 degrees.
  • Beat together the coconut oil and coconut sugar until very well comined.
  • Add the tahini and mix until smooth and creamy,
  • Pour in the milk and flax egg. Mix.
  • Combine the dry ingredients into the wet batter.
  • Lastly, add the raisins.
  • Scoop the dough onto a cookie sheet and bake for 10-12 minutes.
  • When you remove them from the oven, transfer to a rack to COOL.
  • Then you can enjoy.

Rusty the Wonder Dog making another appearance to tell you nope no way. 
Whipped up these real deal BANANA CINNAMON ROLLS this morning and yes smothering them in creamy heaven is not optional. .

DOUGH:
- 3/4 cup almond milk
- 1 packet instant yeast
- 1 banana
- 1 egg
- 3 tbsp melted butter
- 2 tbsp maple syrup
- 1/2 tsp salt
- 3 3/4 cup flour
Heat the milk in the microwave until warm (not super hot) and sprinkle the yeast on top. Let bloom for 10 minutes. Mash the banana with the egg and maple syrup. Add the milk to the banana mix and stir. Fold in the flour and salt. Knead on a floured surface for a couple minutes. Dough will be sticky. Place in an oil bowl, cover, and let rise for an hour. 
FILLING:
Roll out the dough into a large rectangle. Spread 1/4 cup soft butter on the dough, then sprinkle on 1/3 cup brown sugar and 2 tbsp cinnamon. Roll into a long log. 
BAKE:
Slice into 9 rolls and put in a buttered 8x8 pan. Bake at 350° for about 30 minutes. 
ICING:
Beat together 4oz cream cheese + 3 tbsp butter + 3 tbsp milk + 1 cup powdered sugar + 2 tsp cinnamon. Spread on hot cinnamon rolls.

They’re basically fudgey blackout squares of heaven. 
And that icing? A dream.

BROWNIES:
- 1 cup chocolate chips
- 1/2 cup maple syrup
- 1/4 cup peanut butter
- 1/4 cup pumpkin puree
- 1/4 cup coffee
- 2 tbsp ground chia
- 5 tbsp flour (I used chickpea)
- 1/2 tsp salt
- 1 tsp baking soda
Mix together the chia and coffee and set aside for 5 mins to “gel”. Melt together the chocolate, pb, maple syrup, and pumpkin. Add the chia egg, flour, baking soda, and salt. Scoop batter into a lined 9x5 loaf pan and bake at 350° for 35 minutes. 
PB ICING:
- 4 tbsp peanut butter
- 3 tbsp pumpkin pure
- 2 tbsp maple syrup 
Mix together until we’ll combined. Slather on the brownies.

1. Do your research! Know the company / program. Why is it the best for you? Why are you a good fit for them?
2. Think of how you’d describe yourself in 3 words. Use those words as themes for tangible life examples. (Mine are tenacious, creative, and enthusiastic.)
3. Have stories of exemplified leadership and conflict resolution in your back pocket. 
4. Be able to speak to your weaknesses while eluding to how you have and will continue to improve. 
5. Remember to have questions for them! What are you looking for in applicants? What is the growth path for this position? .

MEATBALLS:
1 lb @sevensonsfarms ground chicken + 1/3 cup @havenskitchen chimichurri + 2 tbsp ground chia seeds. Mix. Scoop. Roll. And bake at 450° for 20 minutes. 
SAUCE:
1/2 cup @primalkitchenfoods steak sauce + 1/2 cup @rigoniasiagousa raspberry preserves. Mix together over low heat. 
COVER MEATBALLS IN SAUCE AND DEVOUR!

INGREDIENTS:
- 1/2 cup @soomfoods tahini
- 1/2 cup olive oil
- 1/3 cup maple syrup
- 1 cup packed brown sugar
- 3/4 cup water
- 2 cups pumpkin puree
- 2 flax eggs (2 tbsp flax + 5 tbsp water)
- 2 tbsp apple cider vinegar
- 1 tbsp vanilla extract
- 1 tbsp cinnamon
- 1 tsp pumpkin pie spice
- 1/2 tsp salt
- 1 1/2 cup whole wheat flour
- 2 tsp baking soda
PROCESS:
Mix together the tahini, olive oil, maple syrup, and brown sugar until well combined. Add the rest of the wet ingredients. Then fold in the dry (don’t over mix). Transfer into a lined 9x5 loaf pan. Bake at 350° for 65-75 minutes. Drizzle coconut butter on top for the glaze. Then enjoy!

Filling:
- 1 can pumpkin puree - 1 cup coconut cream
- 1/2 cup maple syrup - 1 tsp pumpkin pie spice
- 1/3 cup arrowroot starch 
Crust & Crumble:
- 1/3 cup @georgiagrinders almond butter - 1/3 cup coconut oil
- 1/3 cup maple syrup
- 1 tbsp molasses - 1 cup quick oats
- 1/3 cup chickpea flour*
- 1 tsp pumpkin pie spice
- 1/2 tsp ginger
- 1/4 tsp salt
- 1/2 tsp baking powder
- 4 @emmysorganics Pumpkin Spice Cookies
Process:
Mix together the crust and press 3/4 of it into a lined loaf pan. Bake at 350° for 10 minutes. Mix together the filling and pour over the crust. Bake for 20 minutes. Remove from oven and crumble the remaining crust on top. Bake for another 20 minutes. LET COOL and enjoy!
*sub any flour
**store in fridge
***replace cookies with 1/4 cup shredded coconut + 1 tbsp maple syrup

Months of “commitment” that were actually neglect. Forcing miles and miles. Hours and hours. But you didn’t break. You fought. I fought. And now, 3 years later, feeling like the best version of me. Breaking the arbitrary mold. Adding 40lbs of life, joy, and muscle. Not only can I stand up without getting dizzy, I can do burpees while singing along to TSwift while teaching. This is my joy. .
